BREAKFAST:
I've been loving overnight oats a lot recently as it's a great, quick breakfast. My favourite is these chocolate and banana oats. They're made up of oats, almond milk, chia seeds, a date, half a mashed banana, greek yogurt and some cocoa powder mixed together and put in the fridge overnight. In the morning I top it with some blueberries and this fills me up until lunch time. I tend to workout in the morning so this will keep me full even after then.
LUNCH:
I've been making salads a lot for lunch. This one was with a base of spinach, tomatoes, radish, avocado and mushroom. On top I tried something new and peeled some carrot and lightly cooked that in a pan with some sweetcorn and chickpeas with some bbq seasoning. It added some great flavouring and made the whole thing a lot more filling.
SNACK:
For a snack I finally tried freezing some grapes. I've heard how this makes a great sweet snack. I have to say these were really tasty and really refreshing. Definitely something i'll be doing a lot this Summer.
DINNER:
For Dinner I went for something simple. I had a cod fish cake with brocolli. To keep things light I did some roasted peppers, courgette and tomatoes and mixed that in with some cous cous that I added some tumeric and garlic powder to. This was so easy to make and surprisingly tasty.
EVENING TREAT:
I like to have something sweet in the evening so I went with some of these healthy cookies I made. The recipe is a Chocolate Covered Katie one since her sweet treats are always so good. I would recommend this recipe as it's so easy to make and really satisfies those sweet cravings.
Drinks wise I pretty much only drank water or water with lemon. I also had a peppermint in the evening. On a daily basis I try to just drink water or tea and save any treats; like coffee, for when I go out. So that's what I eat in a typical day.
