My Favourite Healthy Cookbooks

Since starting my health kick at the start of the year i've been really enjoying collecting healthy cookbooks. Although I look up a lot of recipes online; Pinterest is always your best friend for that, there's something extra special about having an actual cookbook to flick through. There are five standouts in my collection that I thought I would share with you today.

Chocolate Covered Katie by Katie Higgins
Chocolate Covered Katie by Katie Higgins - £13.37 - Started with one of my favourite for sweet treats. I have a huge sweet tooth and love baking so this book is perfect for me. I followed Katie's website for a long time and was happy that she brought out a book. There's loads of healthy takes on classic sweets from cookies, to cheesecakes, brownies and even breakfast and drinks recipes. The book is nicely set out with good pictures and even nutritional values for each recipes. The ingredients aren't hard to get old of and taste amazing.
Deliciously Ella by Ella Woodward
Keep It Vegan by Aine Carlin - £4.99 - This is my latest find and for the price you can't go wrong. This book has breakfasts, snacks, main meals, drinks and sweets all of which are vegan. The recipes are again easy to follow, there's a shopping list at the start of the book of the ingredients you will need, again they're easy to get hold of. There's takes on classic meals made vegan including a great pizza and shepards pie recipe which are new favourites of mine.
Deliciously Ella by Ella Woodward - £9.99 - I think this is the most talk about cookbook at the moment and I can see why. The layout of this book is in grains, vegetables, fruit instead of by meal, although the breakfast and lunch ideas are still somewhat together. I've made so many recipes from this book, the chili, chocolate chia cookies, sweet potato brownies and the bolognese. I like books that are easy to follow with ingredients that i'll have in and this one also ticks those boxes. It's easy to swap out different vegetables depending on what you have which I also love. I'm a big fan of her blog as well, the book as a few recipes from there but also new ones.
The Green Kitchen by David Frenkiel and Luise Vindahl
The Oh She Glows Cookbook by Angela Liddon - £11.89 - This book came up on a recommendation on Amazon and I love it. This is another vegan book however the recipes are wholesome and delicious. This is an American book so some ingredients have different names or are a little hard to find but on a whole it is still very easy to follow. The breakfast recipes in this are some of my favourites along with the mushroom pasta sauce and fajita recipe. Her blog is also a great source for vegan recipes.
The Green Kitchen by David Frenkiel and Luise Vindahl - £17.00 -The Green Kitchen Stories was one of the first healthy eating blogs I discovered and I still love it. It's written by  family who live in Stockholm and the photography is just amazing, they make everything look so tasty. After loving their site and finally picked up the first of the two books they have and I love it. The recipes are easy to follow and the book has a similar style to their site which I love. I love their breakfast and sweet recipes the most. I definitely want to make a lot more things from this book.

All of these books I love and use a lot. I love recipes that are easy to follow and create tasty results. Although i'm not fully vegan and do tend to prefer that style of cooking. The rest of my family are definitely not vegan and have still enjoyed anything i've made from these. What are some of your healthy cookbooks?
